Chocolate Chip Cookie Dough Cheesecake Recipe
My husband just adores cheesecake, so I'm always thinking of new ways to please his palette. This chocolate chip cookie dough cheesecake recipe was a HIT! If you've never tried to make your own cheesecake, let me assure you, this one is a winner and you should definitely try it.
I've been making my husband a cheesecake every year for his birthday, and each year is a new variation. We've tried double chocolate cheesecakes, cherry cheesecakes, and chocolate mouse cheesecakes, but I've never tried a cookie dough cheesecake, so I thought now would be a good time to whip one up! You'll really be surprised by how easy this recipe is, and how quickly you can put it together.
1 pkg. (13 oz.) of chocolate/cream cookies, or about 36 Oreos
4 oz. of butter, melted
3 cream cheese blocks
¾ tsp. vanilla
¾ c. sugar
3 eggs
A roll or block of refrigerated chocolate chipcookie dough
The first step is to crunch up those cookies. Pounding them in a bag with a rolling pin works great. I've also wondered if a few minutes in a KitchenAid would work wonders. Dump them into a sprayed spring form pan, and add your melted butter. Toss the crumbs til coated and press into the pan until you have an even crust.
Blend the cream cheese, sugar, and vanilla well in a mixer on Medium speed. Add in the eggs at the end, for under a minute on Low.
Pull out your refrigerated cookie dough. I found that straight out of the fridge, the dough can be tough to roll, but after too long at room temperature, it gets almost too soft. I'd recommend working with dough that has sit out for just 15 minutes. Break each cookie square into four and roll into balls. I dropped a few balls into the bottom of the pan, but saved most of them for the top.
Bake for one hour at 350º, or until the cookies look cooked and the top of the cheesecake getsthisnice warm spotty top finish.
The most important tip I can offer is to let this cool completely and give it plenty of time in the fridge to firm up! Just like you have to let warm cookies cool so that they don't crumble into a soggy mess on your spatula, you've got to let these cookies firm up before you dare cut into it.
Serve with milk and enjoy! This is a real winner of a cheesecake!
